I made the first batch of these turnovers with my ten-year-old granddaughter, Mary. She noted they were delicious but not too sweet, and I agree! Unlike many similar recipes, these turnovers have no added sugar except for a small amount in the lemon glaze.

Is it for breakfast or dessert? You decide! This recipe brings back memories of toaster strudels (Pop Tarts™ come to mind) – but I promise these homemade turnovers are ten times better!

If you’re the curious or technical type who has to know: according to kitchn.com, “a turnover is a baked good made from puff pastry that’s filled with cooked fruit and is sealed by turning the dough over onto itself. (Side note: typically turnovers are crescent or triangle-shaped, but mine are rectangles. It’s all good!)

Strudels, on the other hand, have a dough that’s stretched wildly thin. A filling is then layered in and the pastry is rolled. When sliced, it looks like a whirlpool inside.”

  • Puff Pastry Sheets – As mentioned, these can be found in the frozen food section of your grocery store. Be sure to buy sheets and not puff pastry shells for this recipe. You’ll need to plan about 30 to 40 minutes of defrosting time before you start working with the sheets.
  • Blackberries – Fresh berries are best, but you can also use frozen.
  • Sugar-Free Blackberry Jam – I had trouble finding this at our grocery store and ended up with jelly instead. But I’ve since learned Walmart carries sugar-free blackberry jam. Note to self: Always check Walmart for “hard-to-find” specialty cooking ingredients.
  • Fresh Thyme – It’s only a small amount, but well worth it to add that extra taste sensation.
  • One egg, beaten – This is for the wash on top (which I forgot) and also to hold the two layers of puff pastry together.
  • Powdered Sugar – for the lemon glaze
  • Zest of one Lemon
  • Fresh Lemon Juice
  • Vanilla Extract — I was out and substituted almond extract; either one will do.
  • Baking sheet
  • Parchment Paper
  • Rolling Pin (or substitute)
  • Pastry Brush to brush on egg wash
  • Citrus Zester
  • Small bowl for Lemon Glaze

Cut each pastry sheet into six rectangles. These will make large turnovers. You can choose to cut them smaller and get more servings.

  • Try Different Fruit. Raspberries, blueberries or strawberries would be great substitutions. Here’s a similar recipe for Cherry Turnovers.
  • Try Different Jams. I’ve seen recipes with raspberries and blueberry jam. Don’t let yourself be held back by one recipe!
  • Don’t be Stingy with the Berries. I was a bit distracted when making these the first time and ended up with a lot more pastry than filling. They were still good, but they could have been so much better.
  • Serve the Turnovers with Ice Cream. Add a scoop of vanilla ice cream if you’re going for a dessert.
